Freshly baked sweet corn crumbed in a crunchy coating with a kick of smokiness. Baked using a combination of panko breadcrumbs and our Smoked Corn & Hemp Better Being Blend. If you've been looking for a healthy alternative to the classic Corn Jack, this could be it.
4 corn cobs, husks peeled and trimmed & silks removed
2 cups Panko bread crumbs
100g gluten free flour of choice
2 large eggs, alternatively you could use vegan egg replacer
100ml almond milk
Preheat oven to 180°C fan forced.
Mix together Blend and Panko bread crumbs in a shallow bowl.
In a separate bowl, whisk the eggs and milk together.
Coat the corn cobs first in the flour (massage the flour into the groves), then in the eggs and finally in the crumbing mix. For a thicker coating, repeat (egg and crumb mix only).
Placed crumbed corn on a lined baking tray.
Bake in oven for 30 minutes or until crumb is crisp and golden.
