Makes for the perfect breaky with a dollop of yoghurt or a late night dessert with some sneaky ice cream
Makes: 10 servings
1 cup Oat Flour
1/4 tsp Salt
2 tbsp Coconut Sugar
5 tbsp Nuttlex or Butter
3 Apples, sliced (we used Pink Lady's and kept the skin on)
1 tsp ground cinnamon
1 lemon, juiced and zested
1 tbsp Nuttlex or Butter
3 tbsp Coconut Sugar
1 cup Rolled Oats
100g Salted Banana Caramel Better Being Blend
Excess liquid from cooked Apple Filling
Pre-heat oven to 180 degree Celsius
Using a food processor, pulse ingredients until base mix forms a crumb like appearance. Press mixture into the base of a 20cm x 30cm lightly greased slice tin lined with non-stick baking paper. Refrigerate for 10 minutes or until firm. Remove from the fridge and cook for 20–25 minutes or until a light golden brown. Set aside.
To make the apple filling, place ingredients into a large saucepan over high heat. Cover and cook for 5 minutes. Remove the lid and cook for 2–3 minutes or until the apples are soft and slightly caramelised, remove excess liquid and keep for the crumble.
Arrange cooked sliced apples over the base in an even layer.
In a large mixing bowl, add oats and blend and combine well, pour in excess liquid from cooked apples and rub mix together with your fingers until mix slightly comes together. Sprinkle mixture over the apples and cook in the oven for 35 minutes or until golden brown.
Allow to cool in the tin, cut into slices to serve.
