Sticky Date pudding is the ultimate sweet indulgence and Winter soul warmer! This version comes bursting with a butterscotch, caramelised flavour, a hint of coffee and a little crunch from my Coffee Maple Crunch Better Being Blend . Plus, it’s single serve - meaning it’s all yours to enjoy with zero sharing required.

INGREDIENTS
Pudding:
25g vanilla or caramel pea protein OR almond meal
1 large Medjool date, roughly chopped
50ml almond milk or milk of choice
1/4 tsp baking powder.
Sauce:
20ml maple syrup + 10g smooth almond butter mixed together
METHOD:
Preheat oven to 180C
In a mixing bowl, combine pea protein, Coffee Maple Crunch Blend and baking powder. Stir to combine
Fold through the chopped Medjool date.
Pour in the almond milk, and stir to combine with dry ingredients to form a batter.
Pour batter into a single serve greased/lined ramekin or mug
Bake for 15 minutes, or until slightly golden brown.
Serve immediately with caramel sauce, ice cream or yoghurt and a sprinkle of extra Better Being Blend.
