Apple Pie Muffins

Without a doubt as the cooler weather makes its way to us, we stock our pantry with tinned apples. They make it so easy to put together a quick apple pie, apple crumble or in this case APPLE PIE tasting MUFFINS. And of course we couldn't make them without using our Spiced Cinnamon Scroll Better Being Base, to give us more flavour.


These muffins are slightly sticky in the center and oh so appley sweet.





INGREDIENTS:


Muffins:

150g Spiced Cinnamon Scroll Better Being Base

1 1/2 cup SR Flour

250g Tinned Apple, 100%

2 Eggs

50g Butter, softened

1/4 cup Maple Syrup ⠀⠀⠀

1/2 cup Milk of choice


Topping:

50g Spiced Cinnamon Scroll Better Being Base

50g Tinned Apple

1 tsp Ground Cinnamon


METHOD:


Preheat oven to 180c and grease a 12 hole muffin tin (large)

  1. Using a hand mixer whip together softened butter and maple syrup until light and pale.

  2. Add in one egg at a time and mix together.

  3. Add milk and mix.

  4. Fold in flour, Better Being Base and tinned apple - don't overmix

  5. Scoop mix out evenly across 9 muffin holes

  6. Top with extra apple and a sprinkle of cinnamon and remaining Better Being Base

  7. Bake in oven for 30 minutes, until golden and a skewer comes out clean
