A cakey banana bread slice filled with plump and juicy blueberries with a sweet oaty crumble you’ll love in every bite.

INGREDIENTS:
Slice:
200g Banana, mashed
2 Eggs
1 tsp Vanilla Extract
1/4 cup Maple Syrup
1/4 cup Milk of choice
1/4 cup Coconut Oil, melted
100g Banana Caramel Cookie Better Being Base
1 1/2 cup SR Flour (+ extra tbsp)
1 1/2 tsp Baking Powder
200g Blueberries, frozen or fresh
Oaty Crumble:
1/2 cup Rolled Oats or Coconut (GF)
100g Banana Caramel Cookie Better Being Base
2 tbsp Coconut Oil
2 tbsp Maple Syrup
1tsp Ground Cinnamon
METHOD:
Preheat oven to 170°C. Lightly grease a 20x20cm square baking pan, set aside.
Toss the blueberries in 1 tablespoons of the flour. Set aside.
In a large mixing bowl, whisk together wet ingredients; mashed banana, eggs, vanilla, maple, milk & coconut oil.
Add in Better Being Base, flour and baking powder into wet mix. Stir with a spatula until well combine. The batter will be thick. 4. Gently fold in the blueberries.
Pour the batter into the prepared pan and smooth the top.
Place all oaty crumble ingredients in a small mixing bowl using a fork to combine leaving some large clumps. Sprinkle the topping evenly on top of the batter.
Bake for 45 - 55 minutes or until a toothpick or knife inserted into the center comes out clean.
Cool the slice for at least 10 minutes before cutting into 9 pieces
