Carrot Cake Banana Bread

Is it a Banana Bread or is it a Carrot Cake?🥕


Maybe its both!!!


1 Cup Wholemeal SR Flour

1 tsp Baking Powder

2 Large Bananas, mashed + extra for the top

1 Large Carrot, grated

1/2 Cup Milk of Choice

1/4 Cup Maple Syrup

2 Tbsp Nuttelex or Coconut Oil

2 Eggs

1 tsp Vanilla


Preheat fan forced oven to 180C and line a loaf tin with baking paper.

  1. In a mixing bowl, combine all of the dry ingredients.

  2. Add wet ingredients one at a time, mixing well to combine.

  3. Pour into the lined loaf tin and bake for 60- 70 minutes or until a skewer comes out clean.

  4. Allow to cool before cutting and storing in the fridge.

* This can also be frozen in individual portions for later on!
