Super crunchy and filled with our newest Spiced Cinnamon Scroll Better Being Base these muesli bars make for the perfect breakfast or on-the-go snack.
They're plant based, naturally sweetened and ABSOLUTLEY delicious. You can even switch out your choice of nuts and seeds to customise the recipe how every you choose.
1 1/2 cups rolled oats
1/4 cup slivered almonds
1/4 cup sunflower seeds
1/4 cup pepitas
3/4 cup creamy nut butter 40 ml coconut oil
1/4 cup maple syrup
250g soft dried dates
Preheat oven to 180°and line an 20x20cm baking dish with baking paper.
Place oats, almonds, sunflower seeds and pepitas on to a large baking tray and bake for 10-15 minutes, or until lightly golden (stir occasionally when baking). Remove from oven and set aside.
In a small saucepan combine nut butter, coconut oil and maple syrup and warm over a medium heat until melted - stir for roughly 5 minutes. Set aside.
Add Better Being Base, chopped dates, toasted oats, nuts, seeds to a large mixing bowl and top with nut butter mixture.
Stir well to combine, using a wooden spoon ensuring all ingredients are evenly coated to ensure bars will stick together.
Pour mixture to prepared 8×8 dish and using the back of a spoon spread mixture evenly while firmly packing it down into the dish. *Use hands if needed!
Place in freezer for 30 minutes to set. Cut into 12 even bars.
Store in refrigerator for 2 weeks, but we know from experience they won't last that long.
