These cookies are a little salty & sweet, gooey inside & crunchy outside and are bursting with chunks of white chocolate. They’re also gluten free, high protein and thanks to our Blend - super easy to make with minimal ingredients.
60g vanilla pea protein powder or almond meal 100g Salted Banana Caramel Better Being Blend 40g butter or vegan alternative, softened 1 large egg, whisked or 70ml liquid egg whites or vegan egg replacer 40g white chocolate, cut into chunks
1 tsp baking powder
Splash of milk, as needed.
Preheat the oven to 180°C.
In a large mixing bowl, combine pea protein, Blend, and baking powder.
Pour in the butter and whisked egg, and mix thoroughly.
Fold through chocolate chunks/chips, adding a splash of almond milk if needed to help combine into a dough.
Using your hands, mold the dough into 6 large cookies, and place on a lined baking tray. Press down and flatten cookies gently before placing in the oven.
Bake for 20-25 minutes or until golden brown. Enjoy freshly warm, or allow to cool completely before refrigerating in an airtight container for up to 7 days. - Makes: 7 cookies Macros: 181 cals, 11g fat, 8g carbs, 9g protein
