Honey Spiced Muffins

Honey, cinnamon and banana are a delicious sweet combination, and together they make these muffins irresistible!


Warmed with the Spiced Cinnamon Scroll Better Being Base and the need for minimal ingredients they are also egg free and super soft.


Better yet the muffin tops get nice a caramelised with the extra honey drizzled over them before they go in the oven to bake.


INGREDIENTS:

200g Spiced Cinnamon Scroll Better Being Base

1/2 cup SR Flour

1 tsp Baking Powder

2 medium Banana's

3 tbsp Apple Sauce

2 tbsp Honey

1 tsp Vanilla Extract

Toppings:

Additional Honey and your choice of nuts or seeds


METHOD:


Preheat oven to 180c. Prepare a 6-hole muffin tray

  1. In a medium-sized mixing bowl, mash banana with apple sauce, honey and vanilla until well combine.

  2. Add in Better Being Base and sift in SR flour and baking powder.

  3. Using a spatula, gently fold ingredients together until evenly mixed (don't over mix).

  4. Evenly divide the batter between muffin holes.

  5. Drizzle batter with extra honey and sprinkle your choice of nuts or seeds on top.

  6. Bake in oven until the muffins are golden, 20 to 25 minutes.

  7. Let them cool and then remove from the muffin tins.

*Best served warm

*Re-heat in microwave for 20-30 seconds
