Single Serve Strawberries & Cream Muffin

Here's a simple treat you can whip up for yourself over the weekend that only requires a few ingredients + one bowl + half a strawberry bar!


  • 30g vanilla pea protein powder (I used @nakedharvestsupplements) or almond meal

  • 60g Greek yoghurt or yoghurt of choice

  • 10g butter or vegan alternative, softened.

  • 50-60ml almond milk or milk of choice

  • 1/2 Strawberry White Choc Blondie Better Being Bar, cut into chunks

  • Fresh Strawberries, sliced

  • 1⁄2 tsp baking powder


  1. Preheat oven to 180°C

  2. In a mixing bowl, combine pea protein and baking powder.

  3. Pour in the almond milk, softened butter and yoghurt, and combine with dry ingredients.

  4. 4. Fold through chunks of Better Being Bar and strawberries until evenly mixed throughout the batter

  5. Pour batter into a single serve, oven-proof ceramic dish and bake for 10-15 minutes.

  6. Dig in!
