Spiced Iced Biscuits

These Spiced Iced biscuits are so delicious and easy to make. They're crunchy and sweet and make that "snap" sound when broken in half.


Baked with warm notes of ginger and cinnamon from our Spiced Cinnamon Scroll Better Being Base and iced with zesty orange icing, they truly are the perfect afternoon biscuit to have with a warm cuppa tea.



INGREDIENTS:


Biscuits:

1/2 tsp baking powder

1/2 tsp vanilla extract

60g butter

2 1/2 tbsp molasses


Icing:

1/2 orange, juiced and zested

1/2 cup - 3/4 cup icing sugar of choice


METHOD:


Preheat oven to 160c and line a baking tray.

  1. In a small saucepan over low heat, melt butter and molasses together.

  2. In a food processor combine base mix, baking powder, vanilla and the melted butter, molasses mix and pulse until mixture forms a dough.

  3. Turn out onto a floured surface or a sheet of parchment paper and using a rolling pin roll dough until 1/2 cm thick.

  4. Using your desired cookie cutter, cut biscuits out and transfer onto lined baking tray. Repeat step 3 and 4 until all dough is used.

  5. Bake in oven for 12-15 minutes

  6. Remove from oven and allow to cool completely. *Biscuits will harden as they cool

  7. Once biscuits a cooled, combine orange juice and zest with icing sugar in a small bowl and drizzle over each biscuit.

  8. Place in refrigerator to set for 5 minutes, then enjoy.
