Sticky Date Loaves w Caramel Icing

It's winter and we've been craving the taste, aroma's and comfort of a sticky date pudding. So we made some tweaks to our original recipe to create little sticky date loaves using the Spiced Cinnamon Scroll Better Being Base.


And instead of a sauce, we created a caramel icing.


They are perfect on their own, slightly warmed in the microwave or served with your favourite vanilla ice-cream.




INGREDIENTS:


Loaves:

2 tbsp SR Flour

1 cup Dates, seeded

1 cup Boiling Water

2 Eggs

2 tbsp Butter, softened

1 tsp Baking Powder


Caramel Icing:

30g Butter

1 1/2 tbsp Milk of choice

2/3 cup Icing sugar


METHOD:


Preheat oven to 180°C and grease 6 mini loaves muffin tray


Loaves:

  1. In a bowl place the dates and boiling water. Leave these to soak until the dates become soft. Drain reserving 1/2 cup of date water.

  2. In a processor or cake mixer, cream the sugar and butter together until it becomes light and creamy.

  3. Add in vanilla and eggs, one at a time mix until combined.

  4. Add in dates, reserved water, baking powder, Base mix and flour and pulse (if using a processor) or mix until batter is formed.

  5. Spoon batter into the loaves muffin tray and place in to the oven for 25 -35 minutes until lightly golden.

  6. Allow to cool for 10 minutes before turning out on to a wire rack to cool completely.

Caramel Icing:

  1. In a medium heat sauce pan melt the butter and sugar together, until sugar slightly dissolves. Stir continuously to prevent burning.

  2. Add in milk and continue to stir until combined.

  3. Gradually stir in 1/3 of a cup of icing sugar at a time until icing forms a semi set paste

  4. Spoon icing mix over chilled loaves and top as desired.
