These bars are jam packed with wholesome, nutritious ingredients, with no baking required. Inspired by the popular Cherry Ripe Bar but SO MUCH HEALTHIER.
INGREDIENTS
Base:
2 tbsp rice malt syrup / honey
2 tbsp coconut oil
Top:
50g desiccated coconut
150g raw cashews
1/4 cup beetroot latté powder
2 tbsp maple syrup / honey
2 tbsp coconut oil Chocolate
Dip:
75g dark chocolate
1 tbsp coconut oil
METHOD
Combine all base ingredients in a food processor and blend until ingredients soften and bind together.
Evenly pour and distribute mix over lined tray, flattening it with the back of a spoon until even and smooth. Place tray in refrigerator while you prepare the beetroot topping.
Combine all topping ingredients in a food processor and blend until ingredients soften and bind together.
Remove base from refrigerator and distribute topping mix over base, flattening down with the back of a spoon. Place tray back into the refrigerator for 4 hours or ideally overnight.
Once set, remove tray from refrigerator and slice slab into 8 even bars. Melt the chocolate with the oil and then dip one end of each bar into the chocolate.
Place each bar on a lined baking tray and place into the refrigerator to set.
