Chocolate Zucchini Brownie Muffins

Chocolate Zucchini Brownie Muffins

Our Chocolate Zucchini Brownies are a perfect combination of rich chocolate flavour and dare we say moist zucchini goodness. They are made with real ingredients including our Dark Choc Chip Brownie Better Being Base, so you can feel good about snacking on!


What's the sneaky secret ingredient? Zucchini! Don't worry, you won't even taste it. The zucchini adds moisture and a fudgy texture to the brownies, while also adding a boost of vitamins and minerals. And if you're a parent looking to for the perfect afternoon pick to share with your kids this recipe is for you


You will need:

1 cup all-purpose flour

1/2 cup sweetener/sugar

1 tsp Baking Powder

1 egg

1/3 cup olive oil

3/4 cup milk

1 cup grated zucchini, squeezed to remove excess moisture

1/2 cup chocolate chips (optional)


Instructions:

  1. 1Preheat your oven to 175°C. Grease a muffin tin lightly with cooking spray or butter.

  2. In a medium mixing bowl, sift together the Better Being Base Mix, flour, sugar and baking powder. Set aside.

  3. In a small bowl, whisk together egg, oil and milk until well combined.

  4. Add grated zucchini into dry mix

  5. Gradually add the wet ingredients to the dry ingredients stirring until just combined. Be careful not to overmix.

  6. Fold in the chocolate chips (if using) until evenly distributed throughout the batter.

  7. Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full. (10 muffins)

  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  9. Remove the muffin tin from the oven and allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

  10. Once cooled, serve and enjoy your delicious zucchini brownie muffins!
