Fairy Bread Weet Bix Slice


I've given my Grandma's Weet-Bix Biscuit Slice a modern twist using our Salted Banana Caramel Better Being Blend


At every family celebration my Grandma whips out a Tupperware container full of Iced Weet-Bix Biscuit Slice, only for my family and I devour them like no tomorrow. EVERY SINGLE TIME!


So it was about time I whipped up a batch and it turned delish!




INGREDIENTS:

Slice:

  • 100g Nuttlex / Butter (melted)

  • 8 Weet-Bix (crumbed)

  • 1/2 cup Plain Flour

  • 1 tsp Baking Powder

  • 1/4 cup Coconut Sugar / Brown Sugar

  • 1/4 cup Maple Syrup

  • 1 medium Banana


Icing:

  • 50g Nuttlex / Butter

  • 100g Icing Sugar

  • 2 tbsp Maple Syrup

  • Sprinkles

  • 1 tsp Dragon Fruit Powder / Beetroot Powder (optional for colour)


METHOD:


Preheat oven to 170°c

Grease & line a 20x20cm square tin


  1. Mix all dry ingredients into a large mixing bowl.

  2. In a separate bowl mash banana, add melted Nuttlex and maple syrup and mix well.

  3. Pour wet mix over dry mix and fold together until well combined (the mix should be slightly sticky).

  4. Pour and smooth mixture into tin.

  5. Bake in oven for 25 minutes.

  6. Remove from oven and allow to cool completely (unfortunately you have to follow this step and not eat it straight out of the oven ).

  7. Using a hand mixer or food processor blend all icing ingredients together.

  8. Spread icing over slice evenly and top with sprinkles.

  9. Set in fridge for 30-60 minutes before slicing into desired size.
