Hot Cross Bun Blondie

Delight in the flavours of Easter with this irresistible Hot Cross Bun Blondie recipe by Hayley Connor! Made with oat flour and Sneaky Wholefoods Spiced Cinnamon Scroll Better Being Base these blondies are moist and flavourful. Enhanced with coconut oil, maple syrup, and fragrant spices, they offer a perfect balance of sweetness and warmth. Bursting with sultanas and white chocolate, each bite is a delicious nod to the classic hot cross bun. Baked to golden perfection, they make a delightful Easter treat or a cozy anytime indulgence.





Ingredients:

1 cup oat flour

1 tsp baking powder

1/3 cup melted coconut oil

1/3 cup maple syrup

1 egg

1 tsp vanilla extract

A pinch of cinnamon, ginger, and nutmeg

1/2 cup sultanas

1/2 cup white chocolate chips


Instructions:

1. Preheat your oven to 180°C (350°F) and line a small loaf tin with baking paper.

2. In a mixing bowl, combine all ingredients except sultanas and white chocolate chips. Stir until thoroughly combined.

3. Gently fold in the sultanas and white chocolate chips until evenly distributed throughout the batter.

4. Pour the batter into the lined loaf tin, spreading it evenly.

5. Bake in the preheated oven for 35–40 minutes, or until the top is golden brown and a skewer inserted into the middle comes out clean.

6. Once baked, remove from the oven and allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

7. Slice into squares or bars and enjoy the delicious flavors of these Hot Cross Bun Blondies!
