Recipe

Serves: 6–8

Ingredients

Base

Filling

  • 150g cream cheese, softened
  • 80g lemon-flavoured Greek yoghurt
  • 50g white chocolate, melted

Toppings (optional, but highly encouraged)

  • Melted white chocolate, for drizzling
  • Lemon zest
  • Crushed biscuits

Method

  1. Prepare the base
    In a large bowl, mix the Lemon Cheesecake Protein Ball Mix with the maple syrup until a soft dough forms.

  2. Shape
    Press the mixture firmly into a mini cheesecake mould or a lined muffin tin. Place in the fridge while you prepare the filling.

  3. Make the filling
    In a bowl, beat the softened cream cheese until smooth. Stir through the Greek yoghurt, then gently mix in the melted white chocolate.

  4. Assemble
    Spoon the filling evenly over the chilled bases, smoothing the tops.

  5. Chill
    Place in the freezer for 1–2 hours, or until firm.

  6. Finish & enjoy
    Drizzle with melted white chocolate and sprinkle with lemon zest and crushed biscuits. Serve straight from the fridge or freezer.

  • Love things extra zesty? Add a little lemon juice or extra zest to the filling.
  • No moulds? A loaf tin lined with baking paper works beautifully—just slice into bars once set.
