Raspberry & Peanut Butter Choc Fudge Protein Balls

 

You know those snacks that feel a little bit indulgent… but still make you feel like you’ve got your life together?

This is that.

I made these on a slow morning with a coffee in hand, no rush, no plan, and somehow ended up with a batch of protein balls with the most delicious combination of flavours, that didn’t last more than a 3 days, once hubby and my daughter found them.

So obviously… I had to share.

Let’s make them

Step 1 - Mix

Add everything (except the chocolate) into a bowl and mix it like you mean business. Allow approx. 2 minutes for the syrup  and peanut butter to melt into the mix and bind together.

Step 2 - Roll

Roll into balls, I average 10 protein balls at ~40g each
I did eat some of the mix straight out of the bowl, so you might get one extra.

Step 3 - Dip

Melt your chocolate and dip each protein ball one.

Step 4 - Set

Pop them in the fridge for 10–15 minutes. Or… eat one straight away. I won’t stop you.

Quick tip

Make a double batch. Put some in the fridge… and some in the freezer. Future you will be very happy about this.
