The truth about “healthy” protein bars (and the Health Star Rating problem)

Walk down any supermarket aisle and you’ll see it. Protein bars with 4 or 4.5 health stars, positioned as the “better for you” option. But here’s the part most people don’t realise: Those ratings don’t always reflect what your body actually experiences.

What is the Health Star Rating?

The Health Star Rating (HSR) system was introduced to help Australians make quicker, healthier choices.

It scores food from 0.5 to 5 stars based on a balance of:

  • Energy (calories)
  • Saturated fat
  • Sugar
  • Sodium

And then offsets those with:

  • Protein
  • Fibre
  • Fruit, veg, nut content

Giving foods with these ⬇️ claims 5 stars

On paper, it makes sense. But in practice? It creates some very strange outcomes.

How “5 star” protein bars are actually made

To achieve a higher star rating, brands need to:

  • Lower sugar
  • Increase fibre
  • Keep protein high 
  • Calories in check

So what do they do? They reformulate. Out go real, whole ingredients. In come alternatives designed to tick the boxes.

You’ll often see:

  • Sugar alcohols (like maltitol, sorbitol)
  • Chicory root fibre (inulin)
  • High-intensity sweeteners
  • Processed fibre syrups

These ingredients help improve the score… But not necessarily how you feel after eating them.

The result? A higher star score,  but a different experience

You’ve probably felt it on of these three things before:

  1. Bloating
  2. Digestive discomfort
  3. That “off” feeling after eating a bar

That’s not a you problem, that's a ingredient problem. Some of these ingredients are known to ferment in the gut, especially for people who are sensitive. Yet the product can still sit on the shelf with a 4.5/5 health star rating.
